Red Cabbage with Chestnuts

Ingredients:

  • 1 large red cabbage, sliced
  • 2 large onions, chopped
  • 3 cloves garlic, pressed
  • 1 tablespoon parsley, chopped
  • 2 pears (not ripe completely), sliced
  • 500 grams dried chestnuts
  • 1 cup vegetable stock
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons red wine vinegar
  • salt and pepper to taste

Directions:

Rinse dried chestnuts in hot water. Precook chestnuts until almost tender.

In a large pot, cook onions, garlic and parsley in olive oil until onions are tender. Add cabbage, cook for 3 - 4 minutes. Add stock, salt and pepper, cover and simmer on low heat for 20 minutes.

Add chestnuts and pears. If required add more stock, and simmer for another 20 minutes. Add vinegar, and simmer a few more minutes.

Season to taste with salt and pepper. Serve Red Cabbage with Chestnuts together with boiled potatoes, braised carrots, and cottage cheese.
