Garlic Soup with Won Ton
(Vegetarian)
Soup Ingredients:
- 2 ½ heads of garlic, peeled and crushed
- 1 large onion, chopped
- 1 leek, chopped
- 8 ½ cups water (2 liters)
- 2 celery stalks, finely chopped
- 2 medium-sized potatoes, cut into dices
- 3 carrots, cut into dices
- 2 fresh or dried chilies or red chili paste
- 1 tablespoon fresh ginger, finely shredded
- 1 tablespoon fresh chives, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon olive oil
- 1 bay leaf
- 1 teaspoon marjoram
- salt and pepper to taste
Won Ton dumplings Ingredients:
- 1 ½ cups whole-wheat flour
- 1 egg, lightly beaten
- water
- 5 dried black mushrooms
- 1 fresh or dried chili or red chili paste
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- 1 teaspoon soy sauce
- black pepper and salt to taste
Directions:
Rinse black mushrooms in hot water, and then cover mushrooms with boiling water and soak for at least
30 minutes. Drain, trim and discard tough stem ends
and finely mince caps.
Add all soup ingredients together and simmer for about 30 minutes.
While soup is simmering, prepare Won Ton dumplings. Mix whole-wheat flour and egg together.
Add some water and the remaining ingredients and combine all into a stiff batter (the mixture should be stiff). Season to taste.
Drop Won Ton mixture into boiling soup about 1 scant teaspoon at a time. When Won Ton dumplings float
they are cooked. Sprinkle your soup with parsley, chives and freshly ground black pepper.
Serve soup immediately with whole-wheat bread.
Vegetarian Garlic Soup is especially recommended during the cold winter days.
This delicious recipe is very easy to make since we do not use any Won Ton wrappers.
